    There's something mysterious and orange brewing fermenting in a blue, tarp-covered fermenter over at Southbrook Winery in Niagara-On-The-Lake. Winemaker Ann Sperling has chosen to experiment with a trial batch of what is known as "orange wine", that is wine made with white grapes that spends considerable time macerating on the grape skins, hence the orange colour imparted upon the final product. The aromatics exploding from the top of this fermenter were truly astonishing, and I am incredibly excited to taste this wine when it is finally bottled. Ann wasn't forthcoming with the identity of the varietal she decided to use for this pilot project, but with a bit of sleuthing I eventually worked out exactly what it was. Any ideas?
