                  The fourth of July is a fantastic time for vegetarians to celebrate, with so many fresh foods being harvested in summer. While many of us quickly jump to burgers and dogs, there are plenty of good foods that are ripe for the picking. “It’s going to take a little bit of thought and a little bit of planning and experimentation but you can definitely come up with a great feast that’s plant based,” says Jeanne Struve. Jeanne Struve is a dietitian with Lee Memorial Health System. “What you want is to pick a good variety of foods,” says Struve. Think fresh salads, grilled veggies, fruit skewers, salsa, hummus, Portobello mushroom burgers, even the all-American potato. “Baked potatoes for a long time they had a really bad rap. A baked potato is not that bad, it really isn’t. Now if you slice it up and fry it, it’s not going to be very healthy,” says Struve. Many health experts suggest reducing our dependence on meat would better our health and free us up from chronic conditions that are plaguing our population. “Coronary disease and many cancers are actually felt to be a disease of wealthier countries, which America is considered, in large part related to their diet and consumption of animal proteins,” says Dr. Brian Taschner, a cardiologist with Lee Memorial Health System. A grazing-style feast, like a 4th of July barbecue, may be the perfect time to sample side dishes. If you want to include meat, do sparingly. “Most people are probably going to still consume some animal protein, maybe limit that to about 10% of your diet,” says Dr. Taschner. In keeping with the spirit of red, white and blue, fill your plate with colorful fruits and veggies. It may help you enjoy many more healthy holidays.
