    Canada Geese are everywhere. We've pushed down bush and created grain belts of feed along their migration path that make them very, very happy. I've just recently got back into hunting them, having finally settled on some preparations that I really truly enjoy tucking into. This vid goes from pre-hunt to rested, sliced, and tasted.

      My increasing verve for cider over the years made me long for having an actual scene in Alberta, which I suspect is in its fertile cesspool infancy. There are folks passionate about the stuff. There are folks learning and making the stuff. There a little pockets of cider peeps obsessed with crushing and pressing in the fall. There just aren't any craft producers here. Yet. Enter Merridale. They're, oh, 1300km from my home, but the nearest craft cider gig. I dig what they do. Their ciders tend to flaunt lovely light tannins like one would see in the Old World. They do many bottlings of different styles. And you can't get it here, because they sell out without distributing further than an hour away. Their recently-won fight with law makers to create a reasonable environment for entrepreneurs to make a distilled cider brandy just makes me love them that much more deeply. Props.

          Once upon a time, I spent a vacation sussing out every last winery in the south Okanagan. In my top 3 was Bill's place. He struck me as a new-world analogue for some of my favourite old-world producers who were hung up on terroir, vintage, quality fruit, and minimalist winemaking.

            Many a romp through France got me very dearly attached to saucisson sec. The count of Albertan charcutiers in business back then, and still, added up to a disheartening zero. There was, however, hope. Every visit to the coast meant pilgrimage to Oyama to get a fix. I've adored their rillettes, confits, terrines, sausages, dry cured products, you name it. I wondered how they got it all so right. Then I met John.

                I happened to meet Dana and Cam on a day they happened to have a van full of foraged nettles and watercress for a Slow Food Canada event we'd both end up at. Couldn't not go visit them again while we were shooting in the Okanagan valley in BC. Love these folks.

                    New series time. I wanted to commit to a series that was strictly about ingredients under my nose where I live, so there's 3 years of these lined up in the production schedule. This one's about whitefish - a wild fish I had no experience with until the past few years, and I've completely fallen in love with it. This vid spends some time in the field, or on the ice rather, and then a couple of my favourite preparations for the whites we catch.
