Inside the doors of Culver City’s Bucato, the beating heart of this narrow Italian restaurant is found neither in the dining room nor in the kitchen, but in a room upstairs, isolated from the chaos of the cooks. The room is modest in its design; simple yet beautiful. A clock hangs on white walls, frosted windows overlook the restaurant below, and large wooden tables dusted with flour are centerstage. Welcome to the pasta lab, the beating heart of Bucato. Directed by Antonio Diaz Cinematography by Nathan Sage Music by A. • The Grade Cellars — A Journey through Wine Country

          03:03

from Life & Thyme / Added

A film by Benjamin Hunter Produced by Antonio Diaz Sunrise is when the vineyard workers begin to make their way into the field of luscious and ripened grapes. The sun is beginning to creep through the mountains giving a faint glimmer through the fog that had settled in the valley. You can smell and taste the sweetness in the air—it’s harvest time in Napa Valley. Equipped with a curved knife and a large container to catch the falling fruit, the team splits in adjacent rows cutting each cluster of cabernet sauvignon grapes. A tractor with a wagon attached to its rear follows the workers through the narrow rows for the purpose of loading all of the harvested grapes. There is a rhythm to it all with every swift cut and brief nudge of the container lying on the ground as they make their way down the line. I’m standing on the edge of the field with a large backpack loaded with camera gear, lenses, filters, and SD cards. My eyes have bags underneath them from the little sleep I was able to get but the mere excitement of observing a harvest unfold in front of me has me quite awake. That, and the cup of coffee I’m drinking is helping too. I can’t see Ben—Life & Thyme filmmaker and cinematographer—as he ventured deep into the field with a modified tripod that rests over his shoulder to stabilize his camera. With me is Tom Thornton, one of the proprietors of The Grade Cellars and owner of Winfield Vineyard—which we stand on. He has a look of joy and wonder as he stares at the fruit of his labor (literally) being harvested which will then be turned into wine—the valley’s nectar. I too have a sense of wonder as I am eager to learn everything about the process and the nuances about creating quality in a bottle. In the proceeding days, our job would be to capture every step of winemaking—from picking the grape to pouring the finished product in a glass. But more than anything, I was looking forward to meeting the cast of characters that would play a role in all of this and capturing the passion that would transpire before us. —AD

              • Proprietors LLC - Designing the Cocktail Experience

                03:33

from Life & Thyme / Added

Amidst the grit and grunge of Downtown Los Angeles, there is a door on the third floor of a large urban building that looms over a corner of the Arts District. The door reads Chapter & Verse through the clouded glass and is tucked away inside a cooperative workspace called HUB. Through this door is a world of experimentation, design, and a young team of creators and curators of the libation experience. Hundreds of bottles of liquor and spirits rest on several shelves over their test bar made of metal and wood. Among their tools are a centrifuge apparatus, a sous vide device, and containers of every possible spice and herb you can think of. It only took one conversation with owners David Kaplan and Alex Day to convince us that we needed to document their story in the hospitality industry. Their product—whether it’s a cocktail, the ambience and design of a restaurant, or simply the shape of the ice cube in your drink—is an experience that is subconsciously appreciated by the consumer in their moment of happiness. Our goal was not to just capture that final moment of enjoyment, but the journey and the meticulous process it takes to get there. The portfolio of restaurants and bars they have managed and curated includes Death & Co (NYC), The Franklin Mortgage & Investment Co (Philadelphia), The Rose (Jackson Hole, Wy), Ellipsis (Mumbai, India), and now their latest venture, Honeycut: an underground (literally) lounge of their own in Downtown Los Angeles. Welcome to the world of Proprietors LLC. — A FILM BY BENJAMIN HUNTER
