                    As documented by the Manchester Evening News; Mancunians finally got a taste of the Michelin star cuisine they have been craving as Ibérica hosted a lavish dinner cooked by Nacho Manzano. Cooking there for the first time on 27th of April with head chef César García, he whipped up a seven-course taster menu showcasing the very best of his country’s cuisine. A sea urchin starter with frozen tomato sponge, seaweed and parsley emulsion from Casa Marcial opened the show followed by a gigantic wild red king prawn, served with a lemongrass croquette, Asturian chicken broth and cucumber pickle. Diners were also treated to melt-in-the-mouth pancetta with bean stew, buttery-soft hake with hollandaise sauce and lettuce water, veal salad with roast marrow straight from the bone, Nacho’s mum’s Asturian chicken with offal ravioli, and a chocolate salad dessert with cider vinegar. Nacho, who is Ibérica’s executive chef and designs the London-based restaurant group’s menus, addressed diners through a translator between courses, telling them: “A lot of work has gone into this. I’m really happy to be here, this is the first time I’ve cooked in this city and in this restaurant that is my home.”​
