        Most times when you hear about a food fad, it’s associated with weight loss and may lack long-term appeal. But the farm to table trend is focused on eating healthy… for life. “We’re very busy in our society and we like things that are quick, easy, convenient. But unfortunately we’re paying a price for that with our health,” says Jeanne Struve, who is a registered dietician with Lee Memorial Health System. The fundamental philosophy is to consume fresh items: including whole fruits, vegetables, grains and nuts; with a heavy emphasis on homegrown. “The more you can get a food ‘as it is grown’, the healthier it is going to be. Unfortunately people don’t realize that food manufacturers will add more fat, more salt, more sugar to a product than they would ever do themselves,” says Struve. Farm to table dining was named one of the top restaurant trends of 2015- but people can certainly shop the principles at the grocery store and take it home. In whatever you buy, choose items that have the least processing. If there’s a lot of ingredients that you can’t pronounce, maybe put it back. Or if you haven’t a clue as to what those ingredients are, that’s probably a very processed food. As part of the processing, food makers add excess sugar, salt and fat- along with preservatives, artificial flavors and colors. Things that may enhance the experience, but don’t build stronger bodies. “We go to the grocery store and we go ‘oh that looks pretty, oh that smells good’ and we just fuel our body with foods that don’t have anything going for it. That should not be it’s only criteria, put it down and look for something that’s going to give you some nutrition,” says Struve. The perimeter of the grocery store is typically where you’ll find the produce, meat and diary: staple items and the building blocks of a fresh way of eating. As soil continues to wash or blow away, people find it increasingly difficult to grow enough food. Many sites, indeed, become so degraded that they can support virtually no plant growth at all. Soil erosion is pervasive everywhere and Volunteers are extremely likely to encounter it. They can help reduce erosion by implementing relatively simple measures; so, given this and the impact erosion has on human welfare and environmental health, it is often worthwhile for Volunteers to consider confronting erosion during their Peace Corps service. This session will help them do so.
