Adelaide is also well known as a gateway to the famous Barossa and Clair Valleys which are a food and wine lovers paradise. Many of the early settlers to this area were German and they brought with them grapes from their homeland.The area is now well-known for producing outstanding shiraz and reisling. While you are in the area, stop at any of the many wineries for a wine tasting or to enjoy a meal using fine local produce. Adelaide is an old world city that attracts visitors for its elegance and romance.

            Let me introduce you to our second small batch wine of 2014 - 5 month skin contact Roussanne. The rise of phenolic whites has been a pleasant surprise to me. I enjoy tannin in all wines, whites no exception. After tasting few of the phenolic whites available domestically I was utterly charmed by the tannin and secondary aromas that skin contact provided. That said- I did tend to enjoy those with the added complexity of a nice wave of primary fruit over the secondary features. It didn’t take much to know I had to have a go with Roussanne, the idea to make a wine with crisp tannin and nice primary fruit interwoven with secondary aromas. Early in Vintage 2014 the grapes were harvested, crushed and put into a VCT (variable capacity tank), with a chilling plate set at 16 degrees to try to keep the primary fruit that I found so delightful. Keeping things as much about this parcel of Roussanne as possible, the wine was not inoculated, it fermented for three weeks and the cap (skins & seeds which float to the surface) was plunged twice daily. After primary ferment I sealed up the tank - I would do nothing more - leaving it to do its own thing & show me what it could do on its own. The ferment was a delight, each day providing a different spectrum of flavours, generally very tropical and very pretty. After the first month the aromas disappeared, the nose went flat/neutral and the wine gave very little. After the second month reduction started to show and by the third month the wine was just plain stinky. I figured it couldn’t get much worse…so I did nothing and left it there. This non-interventionist decision worked well, as by the fourth month the stink started to loosen and by the fifth month the tropical aromas were back, and I figured it was time to bottle. The wine is close to what I set out to achieve. The wine did however, surprise me in a few ways. The skins were a surprisingly effective fining agent, after the cap sank, the wine’s clarity and colour remained surprisingly fresh - definitely not the orange wine we were expecting! Also, the wine is not nearly as tannic as I thought it would be. Personally, though rich with flavour, I’m surprised at the approachability of the wine. Try it yourself with friends and food and decide yourself!
