    This is our entry for Jamie Oliver's Search for a Food Tube Star with Uncle Ben's competition. If you're a Singaporean, there's NO CHANCE that you wouldn't know our iconic dish - Chicken Rice. We all know that Gordon Ramsay came to Singapore a couple weeks back to compete with our local hawkers, and this dish being one of the competing dishes, became our inspiration to pay tribute to the man himself. ;-) With all the days of research done on the ultimate chicken rice, this is our tribute, done THE F WORD STYLE, to Gordon Ramsay.       The meat men really wouldnt be meatmen without cooking MEAT, so we decided one day to do a FULL meat power dish that many people can enjoy! Sio bak, or 烤肉 in chinese, is a dish popular with many people locally. The crispy skin of the pork, combined with the juicy flavor in the oozing meat makes this recipe a killer winner. Do know that it might take about 4 hours to air the meat once marinated, so prepare to wait a couple of hours before you get to taste it.         Katong Laksa, like chicken rice and Char Kway Teow, is one of the dishes that almost all Singaporeans know. So after eating it for so many years we decided to find out how it is made. (Something we discovered: the coconut milk should simmer gently as boiling it too harshly causes the soup to thicken up really fast). Aside from that, I would say that we manage to replicate the familiar taste of Katong Laksa. of course, with more practice, it should get really close to the original taste. This is a dish which proves that patience pays off. Especially while frying the rempah paste and simmering the laksa soup. So guys, give it a try and share your home cooked Laksa with your friends and family. note. we wanted to use fresh coconut milk but couldn't get hold of it that day.             Its been a CRAZY week for us Meatmen! We finally found some time to get our pork chop video done.. over the last weekend we decided to do a simple pork chop grill with garlic and thyme, accompanied by orange mustard mash and roasted peppers. We prepared the roasted peppers in advance by following our friend Elizabeth's recipe here: http://www.ihearapop.com/?p=719 The pork was juicy and soft, and the whole dish was very well-balanced with the tangy, refreshing orange mustard mash and sweet rocking red peppers. Do try this out guys, SIMPLE & total YUMS, go look up your preferred butcher and ask them for THICKER cuts of pork chops! ingredients Orange Mustard Mash: 500grams potatoes Salt and pepper to taste 1 tbsp dijon mustard 3 tbsp mayonnaise 50 ml orange juice Fresh thyme Pork Chop: 2 pcs 3/4 inch thick pork chop with bone Salt and pepper to taste 2 tbsp butter Fresh thyme 2 tbsp olive oil

                Last weekend was our virgin attempt at making ravioli. :) It sure wasn't easy due to the fact that none of us had any experience with a pasta machine before… but with persistence, practice, and 20 eggs killed, we finally succeeded. One thing to know is that freshly made pasta really makes that difference, and by using (only) egg yolks for the pasta really made the pasta soft and slurpy. We made the choice of using simple tomato sauce to compliment the chorizo sausage that we got for this - which was rather delish. If you are to try, BE VERY DELICATE with the ravioli, and that when cooking them the do not break, so as to keep the meaty taste within these happy pouches. (We broke a couple and those were rather diluted, sadly) So we only got this advice for you - Practice, practice, practice. Making pasta from scratch takes a couple of tries, but the taste is gonna be well worth it. ;) ** If you have no pasta machine, just use a rolling pin and keep rolling to your desired thin-ness.
