GUEST BIO Keith Sarloos is the son of Larry and Linda Saarloos. In 1997 Larry and Linda purchased 100 acres in Santa Ynez. They gave growing grapes a try by planting a 17 acre parcel with Syrah. Their grapes were purchased year after year and as the quality continued to increase so did the enticement to hold them back and do something with the grapes themselves. Here we are 15 years later, the vineyard has been expanded, it now covers 30 acres. Keith, is the winemaker. However, all the other family members are involved, one way or another, in the business.         The student will face the master as Cielo Sommelier Pete Beem squares off against friend, mentor, and boss Michael Pechlof in the second installment of Randall's Wines and Spirits' Sommelier Showdown. The sparks will fly Monday, October 15 at 7:00pm at Bar Italia in the Central West End. Of course, it wouldn't be a Showdown without the twist. This time around, our competitors will be pouring strictly vino Italiano in the Showdown's first all-Italian challenge. It isn't every day you get the opportunity to crush and humiliate your boss in a public venue. It probably isn't wise to sieze such an opportunity either; but that is exactly what Cielo's Certified Sommelier Pete Beem will attempt to do when he takes on the Four Season's Food and Beverage Manager Michael Pechlof in three rounds of competitive wine and food pairing. Of course, Pechlof won't be making it easy. A seasoned veteran of the business, Michael has only recently found himself in St. Louis. His last gig... running a world-class wine program in the heart of wine country at the Four Seasons San Francisco. The evening opens with a bang as Bar Italia serves up Fresh Salmon and Smashed Cannellini Bruschetta with Radish and Parsley Pesto. Assuming neither Somm throws in the towel or simply breaks down in tears after this ridiculously difficult antipasto pairing, they'll be given every opportunity to showboat in round two as they select wines to complement the classic fall flavors of Porcini Mushroom Risotto and Roasted Butternut Squash. In round three, we're pulling the pads off the turnbuckles and screaming for a knockout as both Sommeliers bring their best heavyweight red to the table to match a Slow Braised Pork Shoulder Stracotto with Mushrooms, Carrots and Onions served over Soft Polenta with fresh herbs picked from Bar Italia's own on-site Garden!
